Overnight Shredded Beef Tacos

  • 4-5 lb. beef roast (Whatever type roast you prefer, because it is slow cooked, a less expensive cut works fine.
  • 1 pkg. taco seasoning


Cut roast into 4 to 5 large pieces. Add taco seasoning and 1 cup water to crock-pot, mix together. With crock-pot on low heat, add meat to seasoning mixture. Cook overnight.

The next morning and during the next day, check periodically to see if more water needs to be added to keep meat moist. Stir and break up meat chunks when you check on it. Serve in soft or hard shells with your favorite taco toppings. May also add 1 pound of ground beef mixed with 1 package of taco seasoning to make it go farther. Add shortly before serving.
