Combine cucumbers, onion, green peppers in large bowl: sprinkle with salt cover with ice cubes. Let stand 2 hours. Drain thoroughly and press out excess liquid thru cheese cloth. |

Combine chicken stock, chicken, celery, carrots and onion. Bring mixture to a boil. Reduce heat; simmer 30 minutes. |

Pour over cucumbers to 1/8" from top of jar. Place seals and rings on jars and water bath 20 min for quarts, 30 minutes for half gallons. |

Add pectin. Return to a full rolling boil on high. Boil hard for 1 minute. Remove from heat. Skim off foam (if kept it's great for on top of ice cream). |
