Blueberries

Did you know that the blueberry is one of only three fruits entirely native to North America? (The other two are the cranberry and concord grape). This year, along with pumpkin and pecan pie, include a bowl of these pretty berries as a fresh and healthy dessert option for your Thanksgiving table.

After the holiday, stock up on fresh or frozen blueberries and try these easy and tasty ideas.

-    Toss one half cup blueberries into your next batch of pancakes, and top with blueberry jam instead of syrup.

-    Mix a tablespoon of blueberries into a half cup of cottage cheese and serve with baby carrots for a light lunch or after school snack.

-    Believe it or not, blueberries are delicious paired with cooked, cold peas. Try it!

-    Make your own fruit salsa by combining one half cup blueberries, one medium diced pear and apple, and a tablespoon of diced red onion. Serve with scrambled eggs for a breakfast treat.

-    Mix 2 tablespoons fresh or thawed from frozen blueberries with one half cup plain yogurt and a teaspoon of honey or one packet of Splenda. Cheaper and healthier than processed, pre-sweetened varieties.
