Fortune Cookie Love Letters

One day while my husband was at work I found this simple recipe for fortune cookies, then I went to www.quoteshaven.com  and found several quotes about love.  I copied the quotes onto strips of paper, and placed them into the cookies.  He was very surprised to see that I had learned to make fortune cookies, and even more surprised at the meaningful fortunes inside of them.

 

you will need:

4 strips of paper, each 1"x3"

1/2 cups flour

1 tbl. cornstarch

1/4 tsp. salt

1/4 cup cooking oil

2 large egg whites

1 1/2 tsp. water

1/2 tsp. almond extract

1/2 tsp. vanilla extract

1/4 cup candy makers chocolate (melted)

cake decorating sprinkles (I used little red hearts)

 

Directions:

 

 

Write your special messages onto the strips of paper and set aside for later. Preheat oven to 300 degrees.  Line a cookie sheet with wax paper and grease (you must grease the wax paper or the cookies will stick).  Sift together flour, cornstarch, sugar, and salt into a medium bowl. Add oil, egg whites, water and extracts, stir until smooth. Bake one cookie at a time by dropping 1/4 cup of the batter onto the wax paper and using a spatula to form into approximately an 8" circle.  Bake about 12-14 minutes until the cookie turns a light golden brown, but be sure the edges are not over cooked.

 

Immediately peel cookie from wax paper (BE CAREFUL!  THEY ARE VERY HOT!), place fortune in center, fold into a half moon shape, then gently pull ends together to crease.  Hold folded cookie for about thirty seconds to ensure that it retains its shape.  When your cookies are all completed, dip each cookie into the melted chocolate about half way than sprinkle with cake decorations.  Place on foil, shiny side up, to cool.
