 Gift Sacks

This was used as a service project for sisters in the ward. We made the pumpkin bread ahead of time.  Each loaf was wrapped in plastic wrap.  Each of the muffins were wrapped in plastic wrap.  We made the muffins at Relief Society, but it ran a little long.  We assembled each of the paper bags- one for each sister in the ward, and gave them to the visiting teachers to take to each of the sisters that they visit for the month of November.

 

 

 

Materials Needed:

 

   1. Brown paper bag, colored tissue, and raffia

   2.  Mini pumpkin loaves

   3.  Raspberry muffins

   4.  2 pkgs. of instant hot cocoa

   5.  2 pkgs. of cinnamon apple tea (Lipton Herbal Tea)

   6.  Poem, Saying, or Story

   7.  Message from Relief Society

 

 

 

Pumpkin Bread

 

   

3 cups sugar

1 cup oil

4 eggs

1 can (16 oz) pumpkin

1 tsp. baking powder

2 tsp. baking soda

2/3 cups water

3 1/2 cups flour

2 tsp. salt

1 tsp. cinnamon, cloves, nutmeg & allspice

1/2 cup chopped nuts (pecans, walnuts)

 

Cream together sugar and oil.  Add eggs and pumpkin. Mix well.  Add dry ingredients along with the water.  Pour into well-greased and floured loaf pans (or 4-5 mini loaf pans).  Sprinkle nuts along center top of batter.  Bake at 350 degrees for about 1 hour.  Let stand 10 minutes.  Remove from pans and cool.

 

Raspberry Muffins

 

Batter

1 1/2 cup flour

1/4 cup sugar

1/4 cup brown sugar

2 tsp. baking powder

1/4 tsp. salt

1 tsp. cinnamon

1 egg

1/2 cup melted butter

1/2 cup milk

1 1/2 cups raspberries

 

Streusel Topping

 

1/2 cup chopped pecans

1/2 cup brown sugar

1/4 cup flour

1 tsp. cinnamon

2 tbl. melted butter

 

Glaze

 

1/2 cup powdered sugar

1 tbl. fresh lemon juice

 


Line 12 muffin tins or 24 mini-muffin tins.

 

Batter:

 

Sift dry ingredients.  Beat together eggs, butter, milk.  Add to dry ingredients.  Add raspberries.  Mix just until combined.

 

Topping:

 

Mix dry ingredients; cut in butter; sprinkle on top of each muffin.

 

Fill each muffin cup 3/4 full.  Place in pre-heated oven at 350 degrees for 20-25 minutes.

 

Glaze:

 

Drizzle over each warm muffin after its cooked.
