Gluten Free Gingerbread Cake

Tired of always relying on gluten free box mixes?  Make your own gluten free gingerbread cake that is easy and delicious.  Serve this cake with some whipped cream or drizzle lemon sauce over each piece.

Ingredients:

  • 1 1/4 cups quinoa flour
  • 1/2 cup tapioca starch
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. ginger
  • 1 tsp. cinnamon
  • 3/4 cup molasses
  • 1/4 cup water
  • 1/4 cup oil

 

Directions:

Preheat your oven to 350 degrees F.  Grease and sprinkle gf flour an 8 or 9 inch square cake pan.  Combine the flours, baking powder, and spices in a large bowl.  Mix the molasses with the water until the molasses is "dissolved."   Add the oil and mix thoroughly.  Stir the liquid ingredients into the dry ingredients until they are just combined.  Put the batter in the prepared pan.  Bake for 30-35 minutes or until a toothpick inserted in its center comes out dry.  Makes one cake, or about 9 servings.
