Fruit and Broccoli Salad

Broccoli salad

This is a great salad for summer picnics and barbeques!  It's a change from the run of the mill green salads and looks pretty in the serving dish or on someone's plate.

 

Prep time:  15 minutes  Chill: 1 hour

Ingredients

1/2 of a 16-ounce broccoli slaw mix (about 2 1/2 cups)

1 cup seedless red and/or green grapes, halved

1 medium apple, cored and chopped

1/3 to 1/2 cup bottled poppy seed salad dressing

2 medium oranges, peeled, seeded, and sectioned

1/2 cup coarsely chopped pecans or walnuts, toasted if desired.  

Red Bibb lettuce

 

Directions:

In a large bowl, combine broccoli slaw, grapes and apple.  Pour salad dressing over the broccoli mixture; add oranges and toss gently to coat.  Cover and chill for 1 to 4 hours.  Sprinkle with nuts; toss again.  Spoon salad into lettuce-lined dishes or serve next to your main dish.  Makes 6 to 8 servings at 234 calories per serving.
